Chef Steve Fratto brought this classic festival's favorite
dishes to a new level of culinary excellence and taste. To add to the

Chef Steve Fratto prepared an evening of top notch dining with
dishes from this year's great American athletic events. Guests sampled

call it) is one of Signature's favorite places. Hence, the Big Easy

July 4 - Celebrate Independence Day
This was a wonderful gourmet meal with fine wines and a
spectacular backdrop of fireworks over the Kissimmee Lakefront. It
was also one of our best wine downs yet!

January
24 - California Gold in Wine and Food, Signature's most popular
guest chef and new poppa Len kicked off the new year. Gold was discovered
in Sutter's Mill on January 24, 1848. Using that as a guide, Chef
Lenny created 6 solid gold courses.

February
14 - Food and Wine for Lovers, Candlelit tables, French and Italian
wines, and Chef Steve in the kitchen was a combination to make cupid
applaud. We Celebrated Valentines Day in the Signature way. As a special
treat, we had the Latin guitar of Angie Del Riego on the stage. It
was our biggest wine down ever as fun and romance ruled the evening.

14 - Dining in the Far Future: Romulans, Vulcans, and an out of
this world menu made this a unique night to remember. Aside from other
world visitors and special effects, this wine down was actually planned
with future food and wine trends in mind. Creativity and fun ruled
the day!

March 28 - Celebrating Spring Around the World: This was a
fantastic dining experience with all of the fresh flavors of spring.
Highlights included a sumptuous Spanish seafood gazpacho, rillet of
pheasant on an herb polenta, and a richly flavored lamb dish in the
spirit of the season.
Fall 2002

Oct 18th
-Octoberfest, by definition, is a time of music and merry
making featuring beer, sausage and sauerkraut. German Octoberfest,
a tradition in Munich and the Bavarian region of Germany was introduced
to North America in the 1960s. Signature will include some of the
traditions in our evening but expect to enjoy some good German wine
at this feast.
- Nov 1st - Wine
Maker's Dinner - With the Epcot Food and Wine festival going on
strong, we will enjoy the wines of a particular winery with this evening's
food. We are waiting for confirmation on our guest speaker, but this
will be a good opportunity to enjoy the fruits of their labor at this
gourmet meal.
- Nov 8th - It's
All Reds - Enjoy red wine with every course. Because of the nature
of red wines having legs on the side of the glass, the chef wanted
to theme the dinner "We Got Legs" but It's All Reds won.
- Nov 15th - Meet the
Artist's Son This is the weekend for the Osceola Art Festival down
on Main Street. This would be a great weekend to take advantage of some
of the Bed and Breakfast inns that are located nearby, but make your
reservations early for them. We are currently showcasing artwork from
Ivan Ivanovitch Garikow, an internationally listed artist from Russia.
His son just happens to live in Central Florida and has over 200 of
his father's original paintings. The art is interesting to say the least.
The food will be a Culinary Work of Art, and we expect a good time will
be had by all.
- Nov 22nd - A Taste
of the Orient We have received requests to feature this cuisine.
Join us as our chefs create food that will delight all of your taste
sensations, from Sushi to other Oriental favorites. We will even let
you know of our favorite Oriental suppliers in the city.
- Nov 29th - Creole
Delights The Food Lover's Companion implies that Creole cooking
is enjoyed by one of refined cultural background with an appreciation
for an elegant lifestyle. This evening's meal will be created by our
own Chef Kurt Woodbridge who comes to us via a catering business that
worked for movies that were filmed in Central Florida. He even has his
name on the credits on some films that you might know. HIs passion is
cooking, and his specialty is Creole. Join us for what will be an enjoyable
evening for all.
- Dec 13th - Kris Kringle's
Christmas Feast We want to have fun with this. So join us for what
we think Santa would do for the Elf's Party before the last rush to
Christmas. We already have booked some upscale parties around this time,
and will be enjoying many delectables on our appetizer island before
dinner begins. Make reservations early if you would like to enjoy this
dinner.
